Yes, it’s possible. I’m presuming that you will be using Windows 8 Office for your Internet Explorer 10. But anyway it will also be available for Windows 7. There are two settings available, the Express Settings and the Customize settings.
Through the first option, it will be on by default. But through Customize options, there are a number of options you can choose to turn off, including the Do Not Track. Each of these has explanations about the configurations.

I have read your query about the "Do Not Track" feature of Internet Explorer 10. This issue have been raised by many IE 10 users before. As what I have learned upon reading some reviews and posts, you can turn off that feature by following these steps:
1. Open an IE browser, under Tools menu, select Internet Options.
2. Click on "Advanced' tab, under "Security", uncheck 'Always send Do Not Track Header".
3. Restart your browser for the changes to take effect.
