How do I upgrade my 4.2OS to a 5OS?

When I try downloading some apps a message says that it is incompatible with my itouch and that I need the next version. My itouch is a 3rd generation itouch and I have a 4.2 os. Some games need a 4.3 os and some say it needs a 5 os. How do I upgrade my 4.2OS to a 5OS?
