SATA and SAS are quite compatible when it comes to pin where SATA drive can be used in serial SCSI.
Can I use SATA drive to iSCSI drive?
Can I use SATA or SAS in iSCSI? I need to know if I can optimize the access times and transfer rates and configure it for better performance.
ISCSI Uses SATA and SAS
               iSCSI drives are not compatible with SATA drives. They gave different physical interface. You need to use a iSCSI controller, and another way is to use iSCSI Hard Disk to USB conversion. SATA and SAS have the same data rate speeds. But when you talk about SATA vs iSCSI SATA is better and that because iSCSI is an old technology compare to SATA. The cable also of SCSI is larger and the capacity of it Is lower. For now a days SATA is better for computer especially desktop. It will give a higher transfer rate. As per what you said you want to gain better performance you go for the latest model but cheap which is SATA.
