Max is a good alternative application for creating high-quality audio files in various formats, from compact discs or files. Else, try  NMP3 Ripper. But itunes is mush better & if you want a higher quality encoder you can always install the Lame Encoder for iTunes.

I would suggest X Lossless Decoder. It can rip CDs and turn them into lossless audio. This is for Mac Operating Systems and its free. It requires an Intel/PPC and a Mac OS X 10.4 or higher. The latest version is 20121222 and can be found here.
