I think you should go for Intel Core i7-980X Extreme. It’s costly ($990-$1059), but it’s the right choice for you as I think. I am giving you some example features of it why I am telling you to choose this.

1. Number of Cores:6

2. System Clock Speed: 3.33 GHz 

3. Cache memory: 12 MB

4. Bus or Core Ratio: 25

5. Maximum Turbo Frequency: 3.6 GHz

6. Instruction Set: 64-bit

7. Maximum  Memory Size:24 GB

8. Memory Types: DDR3-1066

9. Maximum Memory Bandwidth: 25.6 GB/s.

On the other hand it has Intel turbo bust technology with it, Intel® Hyper-Threading Technology and many new technology with it. If you want to have a stable gaming cafe you should go from this. You can check  INTEL website for further information.
